Onions are one of the main vegetables used in this popular Thai meal. This recipe is not for the popular Western recipe for Yellow Curry แกงกะหรี่ (gaeng kari), but แกงเหลือง (kaeng lueang), literally translated “Yellow Curry”. 

This Thai recipe is also known as gaeng som and originates in Southern Thai Cuisine. It is lighter in color than the Western version of gaeng kari and has a sharper and spicier taste.

The protein for this dish can be tofu for vegetarians, or swapped out for meat protein, often chicken or fish.

  • 2 tsp. Red Curry Paste
  • 1 to 2 tbsp. Yellow Curry Powder
  • 500 ml Coconut milk
  • Some Water ...to thin the coconut milk
  • 200 g Tofu / chicken / fish
  • 2 potatoes large
  • 2 onions chopped and fried
  • 2 tsp. salt
  • 2 tbsp. sugar

Method

  1. Dice protein, potatoes and onions. Fry protein and onions together in a hot, large frypan with curry paste and powder until protein is cooked through.
  2. Pour coconut milk and water in a pot. Add potatoes. Gently boil until potatoes are almost cooked.
  3. Add salt and sugar to fried onions and protein and stir. Add coconut milk and potato to frypan and simmer. If too thick, add more water.
  4. Once potatoes are cooked through, serve with rice.
